  • Nutrition and Food Safety as Strategic Assets

DOI:10.5281/zenodo.1128785 Abstract: The world is facing a growing food crisis. The concerns of food nutritional value, food safety and food security are becoming increasingly real. There is also a direct relationship to the risk of diseases, particularly chronic diseases, to the food we consume. So, there are increasing concerns about the modern day food ecosystem creating foods that can provide the nutritional components for organ function sustenance, as well as, taking a serious view on diet-related diseases. This paper addresses some of the above concerns and gives an overview of the current global situation relating to food nutrition and safety. The paper reviews nutritional aspects of food today compared to those of the last century, compares whole foods found in supermarkets versus those organically grown, as well as population behaviour towards food choices. It provides scientific insights into the effects of some of the global trends such as climate change and other changes environmental changes, and presents what individuals and corporations are doing to use the latest nutritional technologies as strategic assets. Finally, it briefly highlights some of the innovative solutions that are being applied to address several of the above concerns.
  • A New Method to Enhance Contrast of Electron Micrograph of Rat Tissues Sections

DOI:10.5281/zenodo.1108374 Abstract: This report presents an alternative technique of application of contrast agent in vivo, i.e. before sampling. By this new method the electron micrograph of tissue sections have an acceptable contrast compared to other methods and present no artifact of precipitation on sections. Another advantage is that a small amount of contrast is needed to get a good result given that most of them are expensive and extremely toxic.
  • Microwave Pretreatment of Seeds to Extract High Quality Vegetable Oil

Extraction techniques are widely employed for the isolation of bioactive compounds and vegetable oils from oil seeds. Among the different and new available techniques, microwave pretreatment of seeds is a simple and desirable method for production of high quality vegetable oils. Microwave pretreatment for oil extraction has many advantages as follow: improving oil extraction yield and quality, direct extraction capability, lower energy consumption, faster processing time and reduced solvent levels compared with conventional methods. It allows also for better retention and availability of desirable nutraceuticals, such as phytosterols and tocopherols, canolol and phenolic compounds in the extracted oil such as rapeseed oil. This can be a new step to produce nutritional vegetable oils with improved shelf life because of high antioxidant content.
